Just saw a thread on Bluesky from @sarahtaber about how people are smuggling in eggs from Mexico now. Apparently neither Canada nor Mexico are having an egg shortage because they VACCINATE THEIR CHICKENS AGAINST BIRD FLU!
WHICH IS APPARENTLY AN OPTION IN THE US TOO, BUT COMPANIES AREN'T DOING IT BECAUSE MONEY!
They also have smaller flocks so the spread isn't as big. Something we don't have because again, money.

All of the grocery stores are out of eggs, so here's a pro tip. Soft tofu is a great textural and protein replacement for scrambled eggs. Just don't forget that you might need to season it a little more. I started this one with sauteed garlic, onion, and jalapeños.
The tofu isn't because of an egg shortage, necessarily. I just already had it on-hand.

The absence of things to come.
I realize that living in a small town in a sparsely populated state puts us squarely at the ass-end of the supply chain but you should know that this morning our grocery store (Albertsons) was COMPLETELY sold out of eggs. Nary a one on the shelves or in the back.
Apparently, there is now a national shortage.
You might want to move up your grocery shopping date if you haven't already.
