I'm on the fence, should I leave #OpenMediaVault that's on #Debian11 or switch to #Debian12 and just use the command line instead of a webui?

OMV 7 is expected to sit on top of Debian 12, the trend with OMV is that every major ver. release uses the latest Debian. Not sure what your case use is but you can try proxmox, that will give you an enterprise virtual env. feel where things are more suitable and flexible to deploy and manage any container you can afford. I do like their backup servers.
On the other hand, if you just need a low-level media center, OMV does ok job, particularly on low end hardware.
