One trick I learned recently for screen capture in multi-computer setups is to use https://vdo.ninja to send my demo screen over to the streaming PC. The quality is pretty good and it removes the need for a capture device.

It also works pretty well for bringing people on for interviews, much higher quality video and sound. It's all done over WebRTC in the browser
