Unkompliziertes und einfaches Abendessen für den Freitagabend: Sticky Rice Bowl mit Gemüse (TK-Spinat, Tomaten, Asia TK-Mischung, Kokos-Erdnusssauce, Zitronengras, Zimt, Srirachra) und ziemlich geilen Gyros-Soja-Chunks aus dem Airfryer. Gewürzt habe ich die großen Stücke mit meinem Gyrosgewürz, Rezept hier:

Sojastücke in Brühe einweiche, ausdrücken, mit Öl ummanteln, Gewürz drüber streuen und vermischen. Bei 180 °C für 15 Minuten im Aifryer backen, zwischendrin 1 x umrühren, damit sie rundum knusprig werden.

I scraped this recipe from a USA video on YouTube which I can no longer find. It's the most yummy Swedish-style rye sourdough ever. A guest house owner, two self-styled bread experts, a Danish friend and his family and the band I used to be in have all said it was the best bread they had ever tasted. 315g Bottled Water 105g Rye Leaven 250g Rye Flour 250g Strong White Bread Flour 40g Black Treacle 8g Fennel Seed: 3g Caraway Seed 2g Aniseed Seeds 10g Salt Zest of 1 Orange (I use a splash of orange essence) 315g Bottled Water 105g Rye Leaven 250g Rye Flour 250g Strong White Bread Flour 40g Black Treacle 8g Fennel Seed: 3g Caraway Seed 2g Aniseed Seeds 10g Salt Zest of 1 Orange (I use a splash of orange essence) In a mixing bowl, mix the leaven into the water. Add the molasses, all the seeds and orange zest/essence, in a separate bowl, combine the flours and salt. Gradually stir the dry ingredients into the wet using a dough whisk or spoon until the flour is well incorporated. The dough not be too stiff to mix. Cover with plastic and let rest for 15 minutes. After about 15 minutes, mix again for a ‘minute or two. Again let rest for 15 minutes and mix one more time as before. These two mixes build the gluten and take the place of kneading. Now cover the bowl with plastic and let sit at room temperature for roughly 12-14 hours. The rest is too long to fit, it's in the comments.
