Sylke’s home cookingThis Indian Lucknowi Biryani from Vegan Richa is a great rice bake. It takes some time but is essentially easy to make. It’s full of flavour and enough as it is. I was wondering originally whether we need anything to eat with it but simply forgot. Sylke’s home cookingMeatless Monday was quite easy. A while ago I received an interesting Indian spice blend which of course is long gone but I did write down the contents and the steps. Today I used a different Indian spice blend that needs to go (because it’s not as fragrant any more as it should be) and just looked at the ingredients of that one and decided to simply add whatever was missing from the first one. Then I followed the steps I had noted down to make the masala (spice bland in oil), added my basmati rice (mixed again), then water, topped this up with vegetables (carrot and yes, kohlrabi and julienned kohlrabi leaves 😅) and cooked it like simple steamed rice (plus 5 minutes). At the same time I fried a paneer like cheese in a frying pan. I got out our jars with chutneys and bingo, a very nice pilau rice was created.

Ganga<p>In other kitchen news, I have been using Sela Basmati rice lately and love it. It is a gorgeous golden in colour. Sela rice is a par-boiled rice - it is steamed or boiled prior to milling, which retains a lot of its goodness - far more then white rice.</p><p>It is often called "easy rice", despite it being a little harder than white rice and taking longer to cook. While it is a thin but strongly flavoured broth; traditionally it is not eaten with a spoon from a bowl. </p><p>An old blog, Tickle My Senses, no longer in existence, had a wonderful description of Saar. There is nothing more sensual and delightful than eating Indian food with your fingers (as was traditional in India).</p><p> "Well, saar needs to be eaten in the right way for maximum pleasure. </p><p>Pour the piping hot tomato saar over your rice (for me the rice has to be swimming in the saar) then using your finger tips, coat the rice with the piping hot saar, making sure you do not burn yourself ! </p><p>Then scoop mouthfuls of this delicious mixture into your mouth, accompanied with fried foods and vegetable. </p><p>When all is done, lift up the plate to your lips and drink off any remaining saar, the orphaned bits can be polished off by licking your fingers….slurpp!!! Ganga<p>By the late 1990’s I was beginning to cook Indian food or at least attempting to make a fair representation of some dishes. Many of my early attempts came from Goa as that was my first port of call on my first trip to India. Later I expanded my love of Indian food to Tamil cuisine and South Indian in general.</p><p>Saar is similar to the Tamil dish Rasam, but with Goan twists. The recipe is from Tasty Morsels; Goan Food Ingredients and Preparation by Maria de Lourdes Bravo Da Costa Rodrigues. I picked it up on one of my early trips to Goa. It is like the Green and Gold of Goan Cuisine. </p><p>I love to look through the book and remember my many visits to Goa over the years. I adore exploring the different areas of Goa, away from the tourist attractions, and dive into the different cultures. There were many times I travelled with a friend on his motorbike, exploring off-road areas and little-known beaches, as well as the local food markets, food stalls and tiny shops. </p><p>Sleeping in thatched huts, eating at restaurants right on the beach, talking to women on the beach picking up inhabited shells to cook with rice. </p><p>The smell of morning fires ready for cooking the day’s meals, the pink sands on the beaches, the sunsets, spice farms, hills, temples, music. Oh, Goa – I miss you! (I particularly miss the Goa of my first visits. It is no longer the same place, unless you can get well away from the tourist spots.)</p><p>Note the Portuguese name of the author – there are at least 3 distinct cuisines in Goa – that heavily influenced by the Catholic Portuguese cuisine which is also non-vegetarian, that of the Hindu Goans which is more vegetarian and more traditionally South Indian. Ganga<p>It always strikes me as funny - when Indian authors write about yellow mustard seeds (rarer in Indian cuisines) they describe them as less spicy than brown. Ganga<p>A quick trip to the Indian grocery to get mung beans - achieved, and they are now soaking to make sprouts.</p><p>I also wanted some soybeans to work out how they cook in the pressure cooker before I finally set aside a day to make the miso. They are now soaking for 18 hours.</p><p>I came home with a beautiful large bunch of mustard greens as well, couldn't resist, so karson ka saag may be on the menu, altho I see that you can ferment them too.... 😆😆😆 </p><p>While I was there I also saw some black soy beans. Ganga<p>I've been considering what to do with the strained off carrots and beetroots (in slivers) and the left0ver cabbage (a mush).</p><p>The carrots and beets are so flavoursome and will be sauteed into a Shouth Indian style poriyal (a dry, stirfried vegetable dish with spices)</p><p>But the cabbage is pretty flavourless - very interesting. I will either dehydrate and powder it, or freeze it to include in smoothies. Ganga<p>In 2003 someone I knew sent me a recipe for what is probably an Anglo-Indian recipe called Devil's Chutney.
