I checked out the website but couldn't find what it was about (at least in mobile version).

Is it XMPP server? Or something built over XMPP? What are differences with XMPP and Conversations?

It's an xmpp server inside a docker container (prosody), with a Webserver, turn server, custom modules, so you get a read to use complete setup for friends and family with all modern features. Also it has branded clients for ios and Android that are sure to work good and have a common feature set.

"Conversations" is an Android xmpp client. (works with snikket too, snikket uses the open XMPP)

If you're happy with Conversations, continue using it! Snikket is more limited because it focuses on a specific use case.
