So turns out an issue I was having with my server setup over the weekend was due to an actual bug!
I found that I couldn't boot myself into UEFI mode after finishing a UEFI install. But then the legacy install worked just fine. This is apparently due to an incorrectly coded shim in the new version of Ubuntu.
