@bhart People in North America seem to be eating a lot of kale. I feel like not many people eat it often here in Europe. I certainly haven't in a long time

Collard greens would have been the best substitute, though they tend to bring a little more flavor. Mustard greens would also be good, in much smaller quantity. I also like sweet potato greens - I wonder if they would hold up in a soup...
P.S. I'm probably not representative of most of North America 😅
