I was also thinking of protonmail, but :
- it requires clients other than IMAP/SMTP (there is a bridge available https://proton.me/mail/bridge )
- you need a paying plan for custom email domain https://proton.me/mail/pricing

I have both Fastmail and ProtonMail (both paid), and I basically never use Proton. Their increased security translates to app lock in with their apps, but those apps don't even have a full standard email feature set. The desktop web UI is fine, but the app, like all their apps, is a shiny do-nothing.
Also I need wildcard domain sending and Proton bought the forwarding proxy SimpleLogin instead of adding it.
Overall they have "security" but no basic features.
@aaravchen @ancilevien74 @msgood531 Thanks! That is similar to how I feel about Proton. I didn't give it a full trial this time while writing my reviews at https://changelog.complete.org/archives/10711-review-of-reputable-functional-and-secure-email-service , because I still can't bring my own app on mobile, but last time I looked at their mobile app it was really terrible. Unfortunate it hasn't gotten better since. Appreciate the perspective!
